So far chefs have been preserving, conserving and transforming our Over Datum food into all sorts of delicious dishes. This edition, dinner guest became the chefs themselves with the help of food design duo Ernst and Kamiel of Ruigwerk. There was no predetermined menu, as a matter of fact, dinner guests created the menu together by each making a dish of their own.
As food designers, Ernst Ruigrok and Kamiel Vorwerk of Ruigwerk are constantly concerned with how we eat, where we eat, with whom we eat and the impact this has. Their tastefully designed concepts redefine the meaning of ’eating’. Apart from that, they are quite gifted cooks and unleashed their creativity on our Over Datum food. Or, rather, they allowed our guests to unleash their own creativity on the food they brought!
Each Over Datum dinner chef gets to choose how they organize and structure the night, and this week was something we'd never seen before. In a decision that seemed at first to lead to total chaos, Ernst and Kamiel gave free reign to our guests to make whatever they wanted. Split into groups, our guests combined the foods they had brought and with the help of our food design duo came up with a diverse and delicious menu. With no restrictions or limits, our guests were free to unleash their cooking skills on our Over Datum ingredients, once again proving the endless things we can do with 'trash'. With all the cooking complete, and each of the dishes labeled, everyone was free to taste and sample from what seemed like a never-ending table of food.
The goal of the evening was to make as many different dishes as possible, and we definitely succeeded, with the longest and most eclectic menu that we've seen yet.
