Seasonal beer made from the Elder tree

Blossom, berries, branches and Wood Ear. All these ingredients can be found on the Elder tree, also known as Sambucus Nigra. Together with Brouwerij Oedipus and artist Zeger Reyers we research terroir in beer and we brew four seasonal beers with local ingredients from this tree.

The Taste of the Elder: Berries

On this taste-and-test evening, we examine the berries of the Elder tree - an unusual ingredient in beer. What can you do with it? Discover the undreamt-of possibilities at our tasting session!

About the Beer

Elder beer no.3 Bes is a blended beer. We boiled a pale unhopped brew with elderberries and fermented this to a very concentrated berry-beer of 9% ABV. This rich base is blended with Panty stout and Swingers, a salty and sour beer. This blend is a tannic elderberry beer with some roasty flavours and bright acidity.
