Workshop: brew your own beer

Learn how to ferment and flavourize

Water, hop, yeast and grain are the only ingredients you need to brew a beer, but the variations and additions are endless. Mediamatic researches radical beer design and experiments in our own micro brewery. This brew workshop is suitable for the adventurous (and unexperienced) brewers.

A year ago Mediamatic started the monthly Bierberaad, where we explored and tasted radical beer designs. Now we even started brewing our own beers in our Myco Brewery, to produce new materials voor insulation panels for example. Want to learn how to brew our own (radical) beer, join this workshop!

What will you do?

We will start with a short presentation about the basics of beer brewing and the varieties of malts, hops and yeasts. Then the group will be divided in three, each discussing and making up different brewing recipe's. Together with Simon you will decide if you're going to make a stout, IPA, blond or even something more experimental. Then it's time to get the real work started! Step by step we will go through the process. First measuring and milling the malt and cook it. After deciding what hops you're going to use you will go into the mashing and filtering. Finally we store the beer in the fermentation buckets. The bottling itself will happen two weeks later and will only take one hour. You will leave with a sixpack of 3 different 'home-brewed' beers. A little patience is needed however, before opening your beers have to ferment in their bottle for another 2 weeks.

Tasting

During the day there will also be a tasting of several special beers. We will compare and Simon will explain us about different beers and brewing facts. There is enough time to ask questions. After the workshop you have gained knowledge to start brewing at home and more important: start experimenting with different flavors and ingredients.

About Simon

Simon Buijs started brewing in is own student kitchen in the east of Amsterdam. Once he got the hang of it, he and 3 other friends started their own micro-brewer called Brouwerij de Bierkraai. Being 3 scientists and one gastronomer, they share a a great combination of knowledge and sense of taste. Their beers are now sold at numerous locations in Amsterdam.
