Since a few years, Mathilde is in love with cheese, especially french cheese. Not just the taste, but making it too. Mathilde: "I was asking myself 'Why do I do the things that I do?' en 'What can I really not stop doing?' This is how I found out that i wanted to learn how to make cheese. Working with a natural ingredient - the raw milk - is never the same. Making cheese of a constant quality makes this really a special craft."
