This gathering marked the beginning of a living cartography, mapping relationships between 'bodies of water' through the food and stories shared around the table. The menu brought this vision to life with edible plankton drawings, water kefir, water mint, fermented sea kale, samphire, saltwort, sea lavender, wakame, freshwater sterrekers en broccolikers, watercress soup, and water popsicle with sea aster honey and 'sterk water’: spirits.
Waterzooimaal serves as an ongoing exploration into how we can live with water, rather than merely beside it. It invites us to envision a future of vibrant, biodiverse urban quays and asks bold questions about what lies ahead: Is there a future where we can forage directly from our city’s waters? Could the water flowing through our canals provide our … and one day brew our beer and bake our bread?
Held at Mediamatic, the event was part of Future Skin of the City, a project by by Marjolijn Boterenbrood reimagining the living, porous boundaries where the urban landscape meets the aquatic world.
