What does umami look, smell, feel like? We all know it as one of the five basic human tastes - or at least we think we do.

Join our current installation The Body of Umami which explores all its different perceptions!

The installation is part of an ongoing research project investigating how we perceive, understand and culturally associate the taste of umami. The results collected here at Mediamatic will be transformed into a three-dimensional interpretation of umami, bringing together the colour, texture, smell and shape selected by the exhibition's visitors.

We invite you to move through the installation and allow this fifth taste to guide you.
What colour does it have?
What texture?
What smell?
What shape?

You are invited to shape the body of umami based on your associations with it!

You are invited to have a small cup of umami dissolved in water: a colourless liquid with no food, dish or ingredient attached to it. Take a small sip. Then another. Close your eyes if you wish. Focus what's happening on your tongue.

Laila Snevele/Sensoverse

Sensory food designer Laila Snevele explores the perception of food through multisensorial research. What role does colour, shape, texture, temperature, sound, mouthfeel and aroma play in our understanding of a certain food? And how can we use these elements to change or elevate our sense of taste? Snevele designs recipes for the brain.
