Saag Paneer, Butter Chicken, and More

An Indian feast becomes our most aquaponic meal yet

Dal Lentils, Butter Chicken, Saag Paneer, Raita, Mango Chutney - Indian feast featuring aquaponic courgettes, cucumber, spinach and mint.

We have a lot of spinach. And I do mean a lot of spinach.

So I began thinking: what dish can I make that would use the most spinach? The answer was simple: the popular Indian curry saag paneer, which is basically spinach with some cheese suspended in it.

We were also pleasantly surprised this week to discover some courgettes (zucchini) and cucumbers growing high up in our aquaponics grow beds. Things are finally beginning to ripen, and thus the menu expanded to include butter chicken with lots of courgettes, lentil dal with leeks, and a refreshing raita (yoghurt topping) made with aquaponic cucumber and mint.

We served the above with basmati rice, some store-bought naan, and mango chutney.
