The food we serve

Locally sourced and plant-based

We offer a plant-based menu that is constantly changing following the seasonal availability of vegetables and using locally sourced products. The challenges that come from these limitations are used as inspiration to create new tastefull combinations and experiment with preperation methods.

Ingredients

Our dishes are based on the availability of local vegetables, and products of carefully selected suppliers. We grow and harvest our lettuce and herbs in our own (Aquaponic) garden, and do fermenting experiments in the Mediamatic Clean Lab.

The Menu

We offer a 5-course menu that changes daily. In the preparing and composing of the dishes the ingredients are handled with the utmost respect. As chefs, it is our duty to elevate the ingredients with our transformative art, without disregarding their potency. As food designers, we play with different techniques of preparation or preservation. The courses are meant for sharing and we encourage to eat them with your hands rather than using cutlery.

Drinks

We offer a special drink pairing with the menu. This pairing is based on the dishes that we serve, so expect beers and natural wines that play with the tastes on your plate. We also offer a non-alcoholic pairing in which we offer home-made syrups, teas, or fermented drinks like Kombucha or kefir lemonade. 

For our beer selection, we've partnered with Oedipus beers, a local brewery based in Amsterdam Noord. We do collaborations to craft specific beers according to a project or an ingredient we are working with. The wines we offer are organic and come from the Netherlands, Italy and France.

Elderflower beer - We are making a new beer with Oedipus Brewing and Zeger Reyers! The city Amsterdam is filled with the Elderflower, so we decided to check what it tastes like in combination with beer.  During this year we have several events where brew beer with different parts of the plant.
