Let's celebrate harvest with an Abundance Dinner! Chef Thorwald and Arne Hendriks embrace the challenge of agricultural over-abundance. Why? This winter, we got a big supply of prime organic cabbage farmed by Krispijn. He cried for help because the market did not accept any more of his product. Good harvest is super, but also, a very good harvest means that prices (economical value) of great food decrease and approach zero. This feels wrong! At this week's dinner series, Thor and Arne demonstrate that with enough creativity, skill and determination, abundance becomes inspiration for delight and indulgence. You will not only feel satisfied, you'll also never look at humble cabbage with the same eyes again!

Growth and shrinking

When it comes to food, we often crave for more. However, when you reach a state of affluence, it is not always easy to truly celebrate abundance. How can you still be happy with something that you have plenty of? For artist Arne Hendriks, this year's cabbage surplus raises one clear question: how to deal with abundance? 

Surplus, Value and waste

It was a good year for white cabbage. In fact, the affluent cabbage harvest was too much for farmers to process for a fair price. Our current economic system has turned this perfectly eatable and nourishing foods into worthless surplus. The costs to harvest cabbage cannot compete with the low prices demanded by the market. Is it also possible to add value in a different way? During this dinner we celebrate 'worthless' white cabbage and re-instate and determine its value together.

Super Skinny Thai Cabbage Roll - A delicious light and zingy street food dish from white cabbage during Abundance Dinner. Crisp finely sliced vegetables such as green beans and fragrant herbs wrapped in cabbage paper and served with delicious soy sauce made by Chef Thorwald Voss. Anisa Xhomaqi

Arne Hendriks

For The Incredible Shrinking Man, Arne Hendriks set out on a long inquiry into the possibility of shrinking, and the consequences for humanity. Following his proposal for an economy that embraces shrinking, he is currently an artist in residence at Rabobank. In theory, this biggest agricultural bank in the world could be one of the main players in a new and more balanced food-system for the future.

Thorwald Voss

Chef Thorwald Voss likes cabbage and previously cooked a lavish cabbage-only dinner in Lebanese style. The founder of Supperclub and international bitterbal expert travelled and cooked all over the world. Previously he worked with renowned chefs like Joop Braakhekke and cooked from Hong Kong to Nepal and Beirut. With two ex-directors from Heineken he started Chef Thor's Lovebites. For this cabbage dinner he developed his first Sauerkraut-croquette.

Neo-Futurist Dinners

In the Neo-Futurist Dinner series, Mediamatic invites different artists to present their vision for the food of the future. In previous editions, this resulted in an algorithmically established menu or a multi-sensorial five-course dinner corresponding to the five Chinese elements. With these dinners, Mediamatic questions the way in which food, art, science and politics intertwine. 

Practicalities
