New Zealand spinach is enthusiastically thriving in the aquaponics greenhouse, so we're constantly coming up with ways to use it. In the US, dishes that combine spinach and cheese are often dubbed "Florentine". This may not be an authentically Italian name or style, but this week's lasagna was authentically delicious. We made one with ground beef, and one vegetarian version with roasted vegetables. Both included a combination of mozzarella, ricotta and Parmesan cheese, and a generous layer of New Zealand spinach. The spinach was first sauteed in garlic and white wine for added flavor.
